It is a well-known fact that the anime adaptation of Tokyo ghoul did not stand up to the expectations of manga readers. Even though season 1 was the most faithful to the manga, it missed out too many details, did not do justice to many characters, and made the series similar to a battle type anime.

It is generally recommended that you should read the manga right from its beginning. The characters are more fleshed out, there is an emphasis on non-battle elements along with the battle parts.

However, if you absolutely do not want to read the manga from the beginning, start from chapter 46.

Yes, season 1 does cover chapters 1-60, but it leaves out so many parts that if you skip those chapters, you won’t understand plenty of events that take place later on in the manga.
